Chai Latte Protein Muffins

These Chai Latte Protein Muffins by Jess Stillone are naturally sweet, spicy, fluffy and irresistible…everything you want a muffin to be! They are packed with protein, gluten free and vegan too making them a nutritious snack anytime of the day. Plus, they’ll have your kitchen smelling like Christmas!

Chai Latte Protein Muffins

Serves: 9
Time: 40 mins



1 cup buckwheat flour

1/2 cup PranaOn Chai Latte Phyto Fire Protein

1.5 cups soy milk (or any plant based milk)

1 tbsp unsweetened soy or coconut yoghurt

1/2 tsp apple cider vinegar

1.5 tsps baking powder

1 tsp baking soda

1 pinch of salt



1. Preheat oven to 180 degrees Celsius.

2. Combine all dry ingredients.

3. In a small bowl, whisk together the wet ingredients.

4. Add the wet ingredients into the dry and stir well until combined.

5. Bake in the oven for 15-20 minutes, or until a skewer comes out clean.

6. Eat as is or serve with protein frosting.


Chai latte protein frosting 

1 tbsp unsweetened soy or coconut yoghurt

1 tbsp PranaOn Chai Latte Phyto Fire Protein

1 tsp maple syrup

1/2-1.5 tbsp of water or plant milk



1. Mix all ingredients (starting with 1/2 a tbsp of water or plant milk) together in a small bowl.

2. Add more water or plant milk until you reach the desired consistency.

3. Drizzle or spread onto the chai latte protein muffins.
