Halloween Breakfast Parfait

It's close to midnight and something evil's lurking in the dark... oh wait, it's just @healthyeating_jo's Halloween Breakfast Parfait. 

Adding this creamy chia pudding and protein oats in Halloween themed glasses make these a little more spooky and fun for the season. Add some pumpkin purée and pumpkin spice to change up the flavour. 

Halloween Breakfast Parfait
(Serves 2)

Oat Layer
1 cup rolled oats
1 cup almond milk unsweetened (or milk of choice)
Natural sweetener to taste
1/2 cup water
1 serve (44g) French Vanilla Power Plant Protein powder
Mix well. Allow to soak for 30mins or overnight
Add more liquid as required, when ready to serve

Chia Layer
1/4 cup organic chia seeds
1 cup yoghurt (eg coconut, almond, soy)
1/2 tsp vanilla extract (optional)
Natural sweetener to taste (stevia/erythritol, xylitol, coconut sugar, maple syrup)
1/2 cup water (as required)

Mix all ingredients in a jar and place in the fridge for 30mins or overnight to swell. Add additional liquid as required prior to serving.

Top with berries to serve.
