Fluffy Vegan Gluten Free Protein Pancakes

Pancakes should be and can be enjoyed daily with this delicious guilt-free, fluffy vegan protein pancake recipe by Marnie from @hail_thekale. They are gluten free, dairy free, refined sugar free and super easy to make.

Fluffy Vegan Protein Pancakes

Serves: makes 1 serve
Time: 10 minutes

 

Ingredients

30 grams buckwheat flour (ground buckwheat)
1 teaspoon vanilla essence
30ml water or almond milk
80g over-ripe banana
1 teaspoon GF baking powder
1 tablespoon apple cider vinegar
1/2 teaspoon cinamon
1 chia egg (1 tablespoon of chia seeds and 1 tablespoon of water)

 

Method

  1. Combine all ingredients in a food processor or high powered blender.
  2. Heat a non stick pan on medium heat with a spray of coconut oil.
  3. Cook each pancake until bubbles form and flip.
  4. Top with fresh blueberries, peanut butter and coconut yoghurt.

Optional: Top with strawberry chia jam for extra fibre!
