Ingredients:
- 30g oats blended into a flour
- 30g @PranaOn Peanut Protein Powder (Vanilla flavour)
- 120g high protein Greek yogurt (no fat) - (sub for soy for vegan alt.)
- 1 egg (trialled with a banana instead and works just as well)
- 30g cream cheese (cashew cream cheese + lemon juice for vegan)
- 3g icing sugar
- 10g raspberries
- Pinch of baking soda + salt
Instructions:
1. Preheat your oven to 180°C (350°F).
2. In a bowl, mix the oats, protein powder, Greek yogurt and egg until well combined.
3. Fold in the raspberries.
4. In a seperate bowl, mix together cream cheese and icing sugar.
5. Pour the mixture into a baking dish, top with cream cheese and bake for 25-30 minutes or until golden and set. Let it cool slightly before serving.
