Plant Protein Donuts
We couldn't believe it either when we first saw this recipe. A plant-based, high protein, dairy-free and vegan friendly donut recipe is possible and you can make these yourself at home.
Donut worry if you don't have a donut pan, you can grab one from Kmart Austraia for $5 here, or you can try any of these creative methods of making your own donut shapes in this Donut Pan Substitute blog.
But first, let's get the list of ingredients for you...
Ingredients

1 cup all purpose flour

1/2 cup coconut sugar

1 scoop (44g) PranaOn Power Plant Protein in Original (unflavoured)

1 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp himalayan salt

1/2 cup & 2 tbsp oat milk
-
1 egg replacer (such as Bob Red Mills)

1 tbsp melted nuttalex
-
1 tsp vanilla essence
Topping
-
1/2 cup coconut sugar/ raw caster sugar

1 tsp grounded cinnamon

1/4 cup melted nuttalex
Method

Pre-heat the oven to 170-180 degrees C and spray pan with oil

Whisk the flour, coconut sugar, protein powder, baking powder, cinnamon, salt in a large bowl. Pour in the oat milk, egg replacer (as per instructions on packet), melted nuttalex and vanilla essence into the bowl with the dry ingredients. Mix well with a wooden spoon until mixture combines.

Piping the batter into the donut mould (you can purchase these from Kmart Australia for just $5 here) is the easiest otherwise spoon the batter into the donut pan. Fill about 1/2 full, try not to overfill as the donut will rise and you will lose the hole shape.

Bake for 20 mins or until the edges are lightly golden.

Transfer onto rack and leave to cool for 2-3 mins.
Topping

Stir the sugar and cinnamon together in a medium bowl.

Melt nuttalex in a medium bowl

Dip the donuts into the melted butter on both sides or one side if you prefer. Dunk the donuts into the cinnamon sugar mixture to coat.

Best eaten immediately or within a day (if they last).
WARNING: These are very addictive and delicious!!
