Strawberry Sundae Protein Slice

Strawberry Sundae Protein Slice

Serves: makes 4 larger slices (or 8 smaller)

Time: 15-20 minutes

Ingredients

Base

  • 1/2 cup rolled oats
  • 1/2 cup walnuts
  • 3/4 cup pitted dates (soaked in hot water, then drained)
  • 1 tbsp cacao powder
  • 1 tsp vanilla extract
  • Pinch of salt

Filling

To decorate:

  • 1/2 cup raspberries (frozen or fresh)

 

Method

 

  1. Add all the ingredients for the base into a food processor and blend until combined. If the mixture is too dry, add a splash of water or almond milk. The consistency should be so that it can be pressed firmly into a tin and hold shape. Press into a lined tin and refrigerate.
  2. Combine all the ingredients for the filling in a food processor and blend until well combined. Add sweetener to taste if required.
  3. Pour this mixture over the base and press the raspberries evenly into this layer.
  4. Refrigerate for a few hours.
  5. Before serving, allow to thaw at room temperature for 10-15 minutes or until soft enough to slice.
