Strawberry Sundae Protein Slice

Strawberry Sundae Protein Slice
Serves: makes 4 larger slices (or 8 smaller)
Time: 15-20 minutes
Ingredients
Base
- 1/2 cup rolled oats
- 1/2 cup walnuts
- 3/4 cup pitted dates (soaked in hot water, then drained)
- 1 tbsp cacao powder
- 1 tsp vanilla extract
- Pinch of salt
Filling
- 1 scoop PranaOn Strawberry Sundae Power Plant Protein
- 1/2 cup yogurt of choice (we love coconut)
- 1/2 coconut cream
- 3 tbsp almond milk
- 1 tsp vanilla extract
- Optional: Sweetener to taste
To decorate:
- 1/2 cup raspberries (frozen or fresh)
Method
- Add all the ingredients for the base into a food processor and blend until combined. If the mixture is too dry, add a splash of water or almond milk. The consistency should be so that it can be pressed firmly into a tin and hold shape. Press into a lined tin and refrigerate.
- Combine all the ingredients for the filling in a food processor and blend until well combined. Add sweetener to taste if required.
- Pour this mixture over the base and press the raspberries evenly into this layer.
- Refrigerate for a few hours.
- Before serving, allow to thaw at room temperature for 10-15 minutes or until soft enough to slice.
