Protein Granola Crumble

Plant Protein Granola Crumble

makes 6 - 8 serves

You'll need:

2 cups quick oats
1 scoop PranaOn Power Plant Protein powder (this recipe uses Coconut Mylk but feel free to choose your own favourite flavour)
2 tbsp chia seeds
3/4 cup chopped peanuts
1/2 cup chopped almonds
1/2 cup dried cranberries
1/2 cup smooth peanut butter
1/3 cup coconut oil
1/4 cup maple syrup
1/2 tsp salt
1 tbsp vanilla extract

 

Method: 

  1. Preheat oven to 180C. 
  2. Wet ingredients: In a small saucepan on low to medium heat, melt the coconut oil, maple syrup, vanilla extract and peanut butter together.
  3. Dry ingredients: Meanwhile, combine the protein powder, oats, peanuts, chia seeds, almonds and dried cranberries and salt in a mixing bowl.
  4. Combine the wet and dry ingredients in the mixing bowl.
  5. In a small baking tray (8x8) press down the mixture so it is densely packed.
  6. Bake for 25-30 minutes.

Let it cool for 15 minutes and it's ready to serve.
