Salted Caramel Vegan Protein Pancakes

Salted caramel and pancakes are two of our favourite things, so when we came across this recipe for Salted Caramel Protein Pancakes by Sarah Clegg we knew we had to share it with you. They are plant-based, gluten free and super delicious! You can even make the batter the night before and simply fry them up in the morning for a quick, healthy and protein-packed breakfast.

Salted Caramel Vegan Protein Pancakes

Serves: 1-2
Time: 10 mins

Ingredients

1/2 cup almond meal
1/2 cup buckwheat flour (can sub for oat flour)
1/2 cup rice malt syrup
1 teaspoon baking powder
1 1/2 cup soy milk or plant-based milk of choice (less or more depending on desired consistency)
1/2 mashed banana
1 tablespoon natural peanut butter
Squeeze lemon juice

 

Method

Place all ingredient in bowl and stir until well mixed through.

Heat coconut oil in a non-stick pan and pour batter to reach desired pancake size. Allow to cook until small bubbles form on the top surface and then flip and cook until golden on both sides.

Repeat until batter is finished.

Top with banana, coconut, and pure maple syrup or even a healthy chocolate sauce.
