Salted Caramel Crunch Protein Balls

These Salted Caramel Crunch Protein Balls by the lovely Isabelle Cornish are a must make! They’re gluten free, vegan, perfectly sweet, a little salty, and have a delicious crunch and dark chocolate shell. Meal prep a batch for snacks or sweet treats throughout the week. Try not to eat them all at once!

Salted Caramel Crunch Protein Balls

 

Serves: makes 12-15 medium sized balls
Time: 15 minutes

Ingredients

80 g sugar free or dark chocolate
1 cup roasted and salted macadamia nuts
2 tbsp melted coconut oil
2 tbsp warm water
1 tsp vanilla essence
8 drops of liquid stevia
2 tbsp cacao nibs
1/4 cup psyllium husk
1 cup almond meal

 

Method

1. In a fold processor or high speed blender, blend the macadamia nuts with the melted coconut oil, vanilla, liquid stevia and warm water until reaching a smooth butter like paste.

2. In a medium mixing bowl stir the dry ingredients with the blended nut paste.

3. Roll into balls.

4. Melt dark chocolate.

5. Dip the balls in the dark chocolate and place on a plate or lined baking tray to set in the fridge or freezer!
